Shiojiri Shigakukan High School is widely recognized as a unique institution producing wine, with winemaking history dating back to 1943 when the predecessor agricultural school obtained a fruit wine license for tartaric acid production. Currently, about 50 students manage the entire process from grape cultivation to winemaking, deepening their wine knowledge while contributing to the food industry. Supported by Shiojiri City with annual overseas wine training programs, the school's brand "KIKYO Wine" includes red, white, and rosé varieties that have earned high praise, including bronze awards at the Domestic Wine Competition and certification under Nagano Prefecture's Appellation Control system. As winemaking is part of the educational curriculum, production volume is limited with sales restricted to the new wine release in November and the school festival in July, making these student-crafted wines from vineyard to bottle highly sought after educational treasures.
