In January 2019, Hiroyuki Tokunaga, a first graduate of Shiojiri Wine University, founded this winery while working full-time. The winery practices natural cultivation that preserves weeds and insects, fostering biodiversity in their Kikyogahara vineyards. Tokunaga produces small quantities of complex wines and ciders using indigenous yeast, allowing the natural microflora of Nagano to drive fermentation and create distinctive beverages that truly express the local terroir.
