Neurosurgeon Akira Iijima planted Pinot Noir in 2012 and established the winery in 2018 in Chikumagawa, Nagano. Balancing his Tokyo medical practice with winemaking, he crafts Pinot Noir and Merlot from a converted cheese workshop, minimizing pesticide use to produce wines that pair beautifully with French cuisine.
