Yamagata Village obtained a wine special zone in 2014, with Keita Fujisawa playing a key role in securing this designation. Fujisawa inherited approximately 15-year-old Yama-Sauvignon vines from his uncle and was determined to produce wine from them. Small-lot winemaking was impossible without special zone status, which Fujisawa believed would create local jobs, attract residents, and boost tourism. Working closely with the village to obtain the special zone, Taike Winery was founded the following spring. Previously relying on contract winemaking, Fujisawa now collaborates with Takashi Yokomachi, a winemaking advisor from Hiroshima. Working with Yama-Sauvignon—a deeply colored, somewhat acidic variety—Fujisawa strives to craft approachable wines without excessive sharpness. Beyond Yama-Sauvignon, he is planting Merlot, Chardonnay, and various apple varieties. The first vintage was released in 2015 and is sold at a family-run Seven-Eleven in the village.
