The winery produces an extensive range from affordable to premium wines using fresh, safe grapes from their own vineyards and contracted growers. Native varieties like Niagara and Concord, cultivated since the Meiji era, have developed unique local characteristics yielding aromatic wines and refined juices, while European varieties including Merlot, Chardonnay, and Cabernet Sauvignon are crafted into authentic wines.
Shinano Wine's bold innovation extends beyond conventional winemaking through ice wine production, sur lie aging, additive-free wines, and cloudy wines. They also produce rare brandies distilled from Concord and Niagara wines, aged over ten years in barrels. The winery offers free and paid tastings and tours of their unique underground cellar where classical music enhances wine maturation (group tours of 10+ require reservation, currently suspended due to COVID-19 precautions).
