Founded in the late Edo period, Nishi-Iida Shuzoten is located in central Nagano City along the Saigawa River, which originates in the Northern Alps. The harsh winter cold of the Zenkoji Plain provides ideal conditions for sake brewing. Known for renowned sake brands "Shinanohikari" and "Sekizen," this brewery has long been cherished locally as the "Western Brewery." Their unique wine "Shinshu Local Wine Melrose" is crafted using yeast isolated from flowers in collaboration with Tokyo University of Agriculture. Made from locally grown Niagara grapes fermented with periwinkle flower yeast, this wine is carefully bottled to preserve its fresh aroma and the sensation of eating whole grapes. Avoiding mass production, Nishi-Iida applies the same meticulous, handcrafted approach to winemaking as it does to sake brewing.
