Kohei Kawashima, who moved to Takayama Village to pursue agriculture, began cultivating wine grapes in 2016. He established Kawashima Winery in 2021 and completed his first vinification, producing clean wines with selective lees contact that adds complexity while maintaining purity of fruit expression.
