Nobutaka Hatano, former chief viticulturist and winemaker at Villa d'Est, established his own winery "ManMalu Noka" by taking over established vineyards from local farmers in Chikumagawa, Nagano. Working with mature Merlot and Chardonnay vines over 15 years old, Hatano leverages his extensive experience to craft wines from these well-established plantings while planning to diversify with Alsace varieties and new cultivars that will expand his winemaking repertoire.
