Mine Kobayashi, born into a farming family, returned to Yatsugatake in his 30s and began cultivating wine grapes above 1000 meters elevation. In 2023, he completed his handcrafted winery, focusing on natural yeast-fermented Pinot Noir that expresses the unique characteristics of extreme high-altitude viticulture.
