Established in 2014 at the foot of the majestic Mount Yotei, Niseko Winery represents a new generation of Japanese winemaking focused on organic practices and sparkling wine excellence. As one of Japan's few certified organic wineries, they have dedicated themselves to producing exceptional sparkling wines using traditional Méthode Traditionnelle. Their journey began in 2005 with land acquisition, followed by grape planting in 2008 and years of careful development. The winery achieved its first harvest in 2010 and obtained its winery license in 2016, releasing their first in-house sparkling wine in 2017. Located in Niseko's cool climate and rich natural environment, their 4.5-hectare certified organic vineyard cultivates varieties including Sauvignon Blanc, Chardonnay, Bacchus, Müller-Thurgau, Kerner, Gewürztraminer, and Zweigelt. Their commitment to natural winemaking includes no sprays, no fertilizers, hand-picking, natural yeast fermentation, and no added sulfites. The resulting wines showcase fine bubbles and refined flavor profiles that capture the essence of Hokkaido's pristine terroir.
